Perfect for when you do not feel like washing or prepping your veggies!
Ingredients:
- 1 container of NON-GMO Tofu (dice it up in small, bite-sized pieces)
- 2 cans organic, whole coconut milk
- 1 Bag of frozen, organic broccoli
- 1 Bag of frozen, organic cauliflower rice
- 1 Bag of frozen, organic cut carrots
- 1 Bag frozen, organic sweet potatoes
- 1 organic red or orange pepper minced
- 1 small red onion, minced
- 2 cloves of fresh garlic minced
- 1 packed yellow organic curry paste
- Optional: add red pepper flakes, top with pepitas and parsley
Directions:
- Combine all the above ingredients in a Crock Pot/Slow Cooker
- Cook on Medium Heat for 30-minutes
