Coconut Curry Tofu Stew ~ Easy!

Perfect for when you do not feel like washing or prepping your veggies!  


  • 1 container of NON-GMO Tofu (dice it up in small, bite-sized pieces) 
  • 2 cans organic, whole coconut milk
  • 1 Bag of frozen, organic broccoli
  • 1 Bag of frozen, organic cauliflower rice 
  • 1 Bag of frozen, organic cut carrots
  • 1 Bag frozen, organic sweet potatoes
  • 1 organic red or orange pepper minced 
  • 1 small red onion, minced
  • 2 cloves of fresh garlic minced
  • 1 packed yellow organic curry paste 
  • Optional:  add red pepper flakes, top with pepitas and parsley 


  1. Combine all the above ingredients in a Crock Pot/Slow Cooker
  2. Cook on Medium Heat for 30-minutes
