Try this easy recipe that uses your leftovers! Eggs and veggies are a staple in our breakfast.
Ingredients:
1c left over steak, diced (grass-fed/grass-finished recommended)
1c organic spinach (tear it up)
½ organic bell pepper of your choice, diced
½ organic red onion, diced
6 whole organic eggs
1T Organic Heavy Cream
Pink Salt and Black Pepper to taste
3/4c organic Colby jack cheese (or any block cheese of your choice – shred it yourself)
Directions:
1. Grease 9×9 pan, preheat oven to 350
2. Dice steak and place in bottom of pan
3. Tear-up with your fingers and spinach layer over steak
4. Dice up pepper and onion, layer on top of spinach
5. Put eggs and heavy cream in a bowl with salt and pepper, scramble then pour into pan over steak and veggies
6. Place in oven for 30-minutes
7. Sprinkle cheese on top and place back into oven for 5min or until cheese is melted
8. Cut into 9 squares and enjoy!
