This dish is just sizzles and is versatile. Use it as side dish or throw an egg on top for breakfast. Super simple, quick and only 5 ingredients! Who doesn’t love that?!
Ingredients:
2 organic medium sweet potatoes, shredded
2 Shallots, Sliced
6 gloves garlic, sliced
2-3 cups organic spinach, chopped
1 TBSP Avocado oil
Pink Himalayan salt and pepper to taste
Directions:
- Peel potatoes and shred them. Use a food processor if you have a shredding blade or use a cheese grater and do it by hand
- Peel the shallots and garlic, slice thin
- Chop spinach
- Grease pan with oil and heat at medium heat
- Place potatoes in pan and cook till just soft
- Add in shallots, cook till translucent
- Add in spinach and garlic, cook till spinach wilts
- Season with salt and pepper
- Serve!!
