Snazzy-pizzazzy ~ Spinach and Sweet Potato Hash!

This dish is just sizzles and is versatile. Use it as side dish or throw an egg on top for breakfast. Super simple, quick and only 5 ingredients! Who doesn’t love that?!

Ingredients:

2 organic medium sweet potatoes, shredded

2 Shallots, Sliced

6 gloves garlic, sliced

2-3 cups organic spinach, chopped

1 TBSP Avocado oil

Pink Himalayan salt and pepper to taste

Directions:

  1. Peel potatoes and shred them. Use a food processor if you have a shredding blade or use a cheese grater and do it by hand
  2. Peel the shallots and garlic, slice thin
  3. Chop spinach
  4. Grease pan with oil and heat at medium heat
  5. Place potatoes in pan and cook till just soft
  6. Add in shallots, cook till translucent
  7. Add in spinach and garlic, cook till spinach wilts
  8. Season with salt and pepper
  9. Serve!!

This can also be done on the grill if you’re into grilling……..enjoy!
