The Easiest Vegan Pudding – Ever!

Ok, if you are at all like me, you LOVE good, healthy food – and it is even better when it requires little time and effort to make!   #feedmefast

I came up with this idea because I was inspired by a chocolate and avocado pudding I made recently – and I was out of avocados but had soft tofu.

I am a pudding snob and can honestly say this pudding/mousse is the bomb.com and appropriate for non-Vegans and picky eaters too!

Don’t you dare knock this before you try it. This dish is packed with protein and will serve as a healthy serving of fat.

Aubrey’s Awesome Vegan Pudding!

“Guilt-free goodness”

You need:

  • A hand/immersion blender
  • 3-4 oz of lite, non-GMO tofu
  • 1 T dark coco powder
  • 5 drops liquid stevia (can add in organic extracts to suit your fancy) OR ½ scoop of IsaGreens OR Monkfruit
  • 1 tsp of your favorite, healthy oil (coconut, flaxseed, udos, etc.)
  • 1 oz water OR organic almond or soy milk

Mix the above ingredients until they are smooth like a mousse or pudding.

Chill if you’d like or consume at room temperature once thoroughly blended.

Sprinkle on any type of seed, nuts, fresh fruit or mint for a garnish!
