1 lb grass-fed/grass-finished ground beef
2 cans chopped tomatoes or chop them fresh, organic
1 can Rotel
1 can organic black beans (drained and rinsed)
1 can non-gmo corn (drained) *Option to use chopped carrots/celery in place of corn
1 package organic taco seasoning
1 package organic ranch mix
Brown ground beef in a pan with cooking spray. Add everything to slow cooker, turn it on and let it go. I do 4 hours on high, but you do it all day on low.
I always double the recipe because it is such a hit in our house!
Options for the whole family….
For me, I keep it to one small/medium bowl, and top it with a little shredded cheese.
For my husband and son who need a little more than I do, they have a larger portion, and top it with crushed tortilla chips, cheese, and a little sour cream. My son actually likes it as nachos with cheese melted on top.
