Super YUMMY Sweet Potato Crusted Quiche

1 medium organic sweet potato

6 cage free organic eggs

1 medium organic bell pepper

1 small organic purple onion

1T Breakfast Seasoning (I used Primal Palate, but cumin and paprika would suffice)

Himalayan pink salt and pepper to taste

Oil for greasing Preheat oven to 375.

Wash your potatoes and slice very thin, chop pepper and onion.

Place eggs in a bowl and beat till mixed, add salt and pepper for taste.

NOTE:  If you are not dairy-free you can add a little heavy whipping cream to your eggs to make them a fluffier!

Grease a pie plate and place potatoes to cover bottom and sides making a crust (you may have to cut some into different shapes), sprinkle your breakfast seasoning over potatoes. Place pepper and onion into egg mixture, stir to mix, then pour over potatoes.

Place in oven for 30-40 min or until egg is cooked all the way thru in the middle.
